LaBrezza, the specialty restaurant at The St Regis Singapore, is famous for its nuanced Italian cuisine with modern influences and its tranquil surroundings. Its new menu is out, featuring chef de cuisine Luca Moioli’s take on traditional cuisine that combines age-old culinary techniques with modern inspirations, complete with exceptional seasonal ingredients and fresh produce from Italy.

Begin the decadent indulgence with a selection of antipastis like insalata di mare (pictured), which features a delightful seafood spread of prawns, octopus, scallops, mussels, clams and calamari salad.  The cundijun - tonno e condiglione, pan-seared tuna served with Buffalo heart tomatoes, capsicum, cucumber, taggiasche olives and shaved bottarga is also a delicious treat. For a more comforting start to your meal, enjoy the crema fredda di sedano rapa, a chilled celeriac soup with crab meat quenelle, Granny Smith apple, red beetroot and salmon roe topped with lobster oil, or the zuppa di porcini e pollo, a heartwarming porcini mushroom velouté with slow-roasted chicken breast, mushroom espuma and hazelnut powder.            

Pastas are available in two serving sizes, for the option of enjoying an appetiser or a platter of starters to share. Opt for Moioli’s signature homemade tagliolini pasta with pan-seared Boston lobster, or wade through the restaurant’s hefty pasta selection that includes orecchiette, romanesco, burrata e pomodori secchi, which is homemade orecchiette pasta with romanesco cauliflower, burrata cheese, brown anchovies and sundried cherry tomatoes, or ravioli del plin — traditional Piemontese agnolotti filled with chicken, pork and tender veal, served with natural braising sauce.

Seafood aficionados can partake in an assortment of tantalising dishes like the baccalà in due maniere, an oven-stewed cod fish with braised onions and milk reduction, pan-seared cod fillet with organic polenta and charcoal radicchio, or astice alla catalan, a whole poached Boston lobster, green peas purée and fava beans, served with Sardinian vegetable salad, black olives and shaved bottarga. 

For sharing, indulge in a variety of side dishes with the Italian cold cut and cheese platter served with gnocco fritto, white rosemary pizza and pickled vegetables and truffle chicken liver pâté, or the fritto misto, an Italian specialty dish of deep-fried calamari, baby octopus, prawns, seabass and fresh anchovies. For those intending to split a pizza, take delight in sumptuous oven-baked selections including pollo e carciofi, salame, frutti di mare and popular favourites like Hawaii and prosciutto e bufala.

Conclude the Italian gastronomy experience with sweet endings like Amedei 9 chocolate panna cotta served with mango salad, passion fruit coulis and mint leaves or Sicilian cassata, which consists of ricotta cheese and candied fruit terrine with citrus coulis and pistachio gelato.
